When preparing this mixed medley of Heirloom tomatoes, Mishy likes to cut the tomatoes into all different shapes and sizes. Giving this dish eye appeal and elegance. The Rocket used in this dish is called flat leaf rocket which is my absolute favourite with lots of spice and crunch. The whipped feta adds a salty creamy mouth feel. I am in Love.
Ingredients

200g marinated Persian feta

500g mixed heirloom tomatoes

2 tbsp Loving Leaf Salad dressing

1 bunch flat leaf rocket

2 eschallots
-
4 tbsp extra virgin olive oil

Sea salt flakes and freshly cracked pepper to taste
Directions
Drain feta and remove any marinating aromatics. Put in the bowl of a food processor with lemon juice and 2 tbsp of olive oil. Process to smooth taste. Set aside
Cut tomatoes, then wash and drain rocket. Add to a mixing bowl with thinly sliced eschallot. Season with salt and pepper, add 2 tbsp of Loving Leaf Salad dressing.
Pile on a serving plate with dollops of whipped feta.
